Through a slim smoky hotel bar lies a gracious restaurant with a formal dress code. Trompe l`oeil ovals of silky clouds add an ethereal note to the surroundings. Chef Bertrand Vernejoul is mostly known for sauteed foie gras, risotto with wild mushrooms, asparagus and truffles, steamed red snapper with tomato fondue, and seared lobster and foie gras with barley, quince and port wine sauce. Tea in the rotunda, filled with idyllic murals and candelabras, is a special experience. A trio plays ballroom music and jazz Thursday-Saturday, when tables are cleared for dancing. (Prix-fixe menus: lunch, $30; dinner, five-courses, $60.)
Visiting Café Pierre, you`ll find a fine dining facility that focuses on a French fare. Expect the average entrée to cost over $60, and guests are appropriate when dressed quite formal -- jacket and tie are required.
