About the Chef: Founded by internationally acclaimed Chef Roy Yamaguchi who is Hawaii`s first James Beard Award Winner, Roy`s Restaurants set out to explore new directions – freely blending European techniques with familiar ingredients of Asia and the Pacific. The Management: Under the direction of award-winning Executive Chef Edgar Theisen, Roy`s Boca Raton Restaurant has won raves reviews. Chef Theisen began his career in his native Germany with a three-year apprenticeship at Zum Domstein. He worked aboard the Cunard’s prestigious ship the Queen Elizabeth II, Royal Viking Line and Seabourn Cruise Line. In Sweden, Chef Theisen served as Chef de Partie at the Operakaellaren, catering to Europe’s celebrities and royals. He spent a year in Alaska before relocating to the Hawaiian Islands where he worked alongside Chef Jean Marie Josselin at The Beach House –A Pacific Café. Chef Theisen then joined Chef Roy Yamaguchi last year at Roy’s in Poipu before moving to Florida, where he now presides over the creative culinary staff at Roy’s Boca Raton.
