The owners of the hip Le Zoo have another winner in Waterloo, a cool, industrial Belgian restaurant with a chic European clientele. The windows are frosted glass, banquettes are birchwood, and tarpaulins like patchwork quilts hang as a backdrop. Black pots of mussels come in a variety of ways, and other recommended dishes include lobster and pike cake wrapped in endive skin; monkfish with shellfish coulis; and roasted veal kidney with juniper beer sauce. They have a worldly wine list and carry an exceptional selection of Belgian beers.
