When Sostanza`s former owner, Chef Erin Rosella, closed the doors last summer all the regulars who flocked here were left at a loss. Sostanza had filled the elegantly rustic, romantic niche so well. Then came Lorenzo Cianciusi, former chef and co-owner of Assiago, to the rescue. Sostanza, complete with glowing walls and the familiar fireplace, reopened in September of 1996 and the regulars rejoiced. "If you are what you eat, you are about to become irresistible," says the menu. Popular items include the zupetta toscano (a hearty soup with cannellini beans) and pancetta, green bean and fennel salad, and homemade desserts, including wonderful granitas.
