No question, a trip to New Orleans isn't complete until you've compromised your health and had cafe au lait and beignets at Cafe Du Monde -- once, twice, or more -- and rubbed shoulders with all those tourists to New Orleans and quite a few locals in that great open dining space. I have, however, the last three or four times I've been there had trouble getting service. More than once, after finally getting the table cleaned (usually still sticky after the quick, wet wipe) and order taken, have waited an extraordinarily long time to get served only to find out the person who took my order had either taken a break or quit for the day! Better quality control is also needed. Hot, puffed beignets covered with powdered sugar are unbelievable. Although still tasty, too often the beignets are flat and not puffed. This makes the already heavy pastry seem even heavier. Regardless, three beignets, most often don't seem enough. I've quit eating at the outlet in the Riverwalk, however. More often than not, their beignets are deflated and cold -- obviously from sitting around too long after being fried.
