  Gerard's is one of my favorite fine dining venues in New Orleans. Simplicity is the key here because Chef Gerard Maras has a knack for showcasing his perfect ingredients. He doesn't need to be a TV celebrity to create a buzz about his cuisine; in fact, when the chef isn't in his kitchen, he spends much of his time farming 40 acres in nearby Washington Parish. As a result of this connection to the land, Gerard's features the best produce to grace the tables of a New Orleans restaurant.

I remember an extraordinary salad of a roasted red pepper, with anchovies, black olives, and thin pieces of Tuscan pecorino cheese. The pepper was huge, juicy, and unbelievably mouth-watering. The anchovies seemed fresh, not oily, and certainly not fishy. As for the olives, I have never seen such tiny ones, yet their succulence and briny bite were a wonderful accompaniment. Only a supremely confident chef would dare to present such a simple dish with the skill to make it a transcendent experience.

When you are seated at Gerard's, the menu will have a side for the regular items, and the other half will be devoted to seasonal specialties. Soon some baby baguettes and pots of butter and a divine chicken liver mousse will appear to help one's deliberations. The wine list is carefully chosen and assembled with passion. Relax; enjoy the conversation with one's dining companions. You're in good hands tonight.

Be sure to save room for dessert! All card-carrying chocolate addicts are headed straight to heaven with the luscious Theobroma, an island of intense devil's food cake surrounded by a wonderful soup of chocolate sauce. The effect is one of rapturous pleasure. There are other good desserts and a fine cheese plate for those not devoted to the deep, dark ecstasies of chocolate. Theobroma is the botanical name for chocolate, which literally translates as "food of the gods." Trust me, indulgences like this don't come around every lifetime.
